Spring Onion Salsa

Preparation time: 
5-10 minutes
  • 1 avocado, peeled and finely diced
  • 3 bunches spring onions, peeled and finely sliced
  • 1 green pepper, finely diced
  • 2 green chillies, de-seeded and finely diced
  • ½ cucumber, de-seeded and finely diced
  • Juice of 1 lime
  • Olive oil to coat ingredients
  • Freshly milled sea salt and black pepper
  1. Place all of the vegetables into a bowl, and pour over enough olive oil to coat all ingredients.
  2. Add the lime juice and mix thoroughly.
  3. Season with salt and pepper as necessary.
  4. Place into Pyrex tapas bowl to serve.
