Oatmeal Soda Bread

  • 175g wholemeal bread flour
  • 50g plain flour
  • 50g porridge oats
  • 25g wheat germ
  • 1 level teaspoon bicarbonate of soda
  • 1 teaspoon salt
  • 1 teaspoon caster sugar
  • 1 free-range egg
  • 275mls buttermilk
  • Extra flour for dusting
  1. Pre-heat the oven to 190°C/Gas Mark 5.
  2. Flour a Pyrex non-stick baking tray.
  3. Place all the dry ingredients into a large Pyrex glass bowl and mix to combine.
  4. Beat together the egg and buttermilk and gradually add to the dry ingredients until a smooth but not sticky dough is formed.
  5. Shape into a round about 15 cm across and make a deep cut across it three times.
  6. Sprinkle with flour and bake in the oven for 50-60 minutes.
  7. Allow to cool on a wire rack and eat right away.
