  • 225g Plain flour
  • 175g Caster sugar
  • 125g Pistachio nuts
  • ¼ tsp Baking powder
  • 2 Whole eggs
  • 1 Egg yolk
  • Zest of 1 orange
  • Zest of 1 lemon
  • Food processor with main knife blade or Kenwood Chef OR kMix with K beater
  1. Tip: You can make the biscotti a couple of days before you want to serve it and store it in an airtight container.
  2. Attach the K Beater to the stand mixer or the knife blade to the food processor.
  3. Add the flour, sugar, baking powder, lemon and orange zests and process until the ingredients are combined.
  4. With the machine running add the eggs and nuts then make into a dough.
  5. Roll it on a floured surface into a sausage shape.
  6. Place the sausage onto a baking sheet and bake into a preheated oven at 170°C/ Fan 150 ºC/Gas 3 for 20 minutes.
  7. Slice into rounds and return to the oven until crisp.
  8. Chocolate and Orange - Omit the pistachio nuts and add 50g cocoa powder and 100g chopped chocolate pieces.
  9. Lime and Chive - Omit the pistachio nuts, oranges and lemon zest and replace with the zest of 3 limes and 2 tsp of snipped chives.
  10. Lemon and Ginger -Omit the pistachio nuts, orange zest and add 1 tsp of ground ginger.
