Spiced Apple Muffins
These are easy midweek baking, making good use of our delicious eating apples. Add a pinch of black pepper for a more grown up flavour to tingle the palate.

Ingredients
- 250g Billington’s Golden Granulated Sugar
- 150g Président Slightly Salted Butter, softened
- 3 eating apples, finely chopped
- 400g self raising flour
- 2 tsp baking powder
- Pinch salt
- 2 eggs, beaten
- 100ml Just Milk
- 100ml sunflower oil
- Billington’s Golden Granulated sugar for sprinkling

- 2x Pyrex Non Stick Muffin Tins
- Pyrex Glass Bowl
- Small saucepan
Method
- Preheat the oven to 180°C/ 170°C fan/ 350°F. Line the muffin tin with muffin papers or Grease and flour each hole.
- Take a tablespoon each of Billington’s sugar and butter and melt over medium heat in a small pan. Add the apples and Stir over heat for 2 minutes until slightly soft. Remove from heat.
- Mix together the flour, Baking powder, Billington’s sugar and salt. Rub in the remaining butter. Make a well in the middle and add the eggs, milk and oil. Stir all together until blended. Stir in the apple.
- Spoon the mix into the muffin tin and sprinkle with Billington’s granulated sugar. Bake for 25 minutes, or until a skewer comes out clean when inserted into the middle. Cool on a rack. Store in an airtight container for up to 7 days.
