Baked Vanilla Cheesecake

Baked Vanilla Cheesecake

Ingredients

  • 50g Président Slightly Salted Butter, melted
  • 250g digestive biscuits - crushed
  • 227g cottage cheese
  • 200g cream cheese
  • 125g Billington’s Golden Caster Sugar
  • 3 eggs – separated
  • 25g cornflour
  • ½ tsp Nielsen-Massey Vanilla Extract

Equipment

  • Pyrex 26cm Non-Stick Springform Cake Tin
  • Kenwood Food processor

Method

  1. Heat the oven to 140°C (300°F Gas 2)
  2. Mix the crushed biscuits with the melted butter and press into the base of the cake tin
  3. Place the cheeses, sugar, egg yolks, corn flour and Vanilla Extract in the processor and pulse until fully blended
  4. Whisk the egg whites until stiff and Fold into the mixture
  5. Pour onto the biscuit base and bake in the middle of the oven for 1 – 1½ hours
  6. Leave to Cool then carefully remove from the tin
  7. Decorate with berries or fruit of your choice and serve
